Manual harvest allowing selective sorting, 90% of the vinification is whole-bunch, only airless delestage followed by classic pumping-over, 11-day vatting.
Ageing
67% of the cuvée was aged for two winters in demi-muids and 33% in egg-shaped concrete tanks.

Meaning of the name
The first vintage in 2008, this cuvée showcases the terroir of a selection of parcels from our estate.
In the midst of these parcels flows a fountain, hence the obvious choice for its name.
Their uniqueness lies in having only deep blue clays, resulting in very fine tannins in this cuvée, along with its minerality, freshness, and long finish.
Tasting notes
The deep garnet-red color with ruby highlights is limpid and brilliant. The nose is very airy and quickly develops notes of red fruit and sweet spices.
On aeration, more subtle notes of black fruit take over, reminiscent of wild blackberry and morello cherry, followed by cinnamon, cardamom and gray pepper.
Finally, more powdery notes of cocoa bean and incense round out the aromatic palette, ensuring complexity.
The palate does not disappoint; from the outset, suppleness dominates. Aromas of sweet spices follow on from the nose. Beautiful tannins add velvetiness and relief to the mid-palate and finish. The finish is long and well-balanced, without heaviness.
Pairings
This powerful yet delicate wine can be opened now, but will keep for another 3 to 5 years if you prefer spicy notes. Pair it with red meats, grilled lamb with herbs or roast rabbit.
