Manual harvest in crates allowing for selective sorting. 100% destemming, light crushing, one pump-over per day, fortification to a density between 1037 and 1040 with the addition of pure vinous alcohol at 96° degrees to 10%, followed by maceration for approximately three and a half weeks. Racking based on tasting, then blending of free-run juice and pressed juice.

Tasting notes
This new vintage reveals a quest for extraction, richness, and strength, but also for smoothness, finesse, and balance.
The robe is deep.
The aromas of wild berries are enhanced by spicy touches and fresh notes reminiscent of cardamom and nutmeg. More floral notes of peony, red flower finally give an airy and playful side.
The ample and solid palate nonetheless shows a lively vivacity that balances this original product.
Pairings
This wine lends itself willingly today to sweet-savory pairings such as a tagine with prunes or red meat with fruit ketchup. Otherwise, simply for the pleasure at the end of a meal.
