Vinification

Manual harvest and crate selection. Direct pressing, fermentation temperature controlled at 16°C, fortification to a density between 1037 and 1040 with the addition of pure vinous alcohol at 96° degrees to 10%. Racking.

Ageing

This sweet wine was aged 100% in 300-liter barrels for 4 years. The barrels were not topped up to allow for natural noble oxidation.

Tasting notes

After a few years of aging, the robe of this amber sweet wine has taken on shades of old gold.

On the nose, honeyed yellow flowers mingle with quince, mirabelle plum, orange zest, citron jam, on a background of gently spicy blond tobacco. A note of peat further enhances the aromatic complexity as it aerates. It’s a bouquet of soft and intense scents that gradually reveal themselves.

The sweet and generous palate unfolds with notes of raisined grapes, gingerbread, and warm bread crust. It is balanced by a lively freshness with persistent accents of candied citrus.

Pairings

We will now open it with a walnut cake, a citrus salad, or simply on its own, like a cognac.
