Meaning of the name
The first vintage in the Rasteau appellation of the estate was in 2004, and the last one baptized in 2012.
Its name reflects the homogeneity of blue and yellow clays from the fabulous terroir of Rasteau and the soul of the estate, hence ‘spirit’.
The yellow clay brings roundness in the middle of the palate, and the blue clay plays on depth and elegance, with minerality and very silky tannins.
Tasting notes
The deep garnet-red robe with violet reflections is clear and shiny.
The nose is quickly airy with a strong presence of fresh red berries. After aeration, the notes of red fruits gain even more depth, then sweet spices like cinnamon and cardamom, along with gray pepper, dominate. Black fruits complete the aromatic palette, ensuring a beautiful complexity.
The palate does not disappoint; from the attack, suppleness dominates. The aromas of sweet spices extend the perceptions of the nose. Very beautiful tannins bring velvety texture and provide relief in the middle and end of the mouth. The finish is long and presents a beautiful balance, without heaviness. This very delicate and suave wine can be opened within 10 years, or even more if you prefer spicy notes to dominate.
Pairings
This wine pairs perfectly with red meats, grilled herb-crusted lamb, or roasted rabbit.
